Compensation (Pay/Benefits) Unpaid internship with mileage reimbursement eligible

Schedule: 40 hours/week (8am-5pm weekdays) for duration of rotation; hybrid onsite and home schedule.

Location: Home office and Minnetonka and Minneapolis office locations

Program Summary:

The?Early Childhood Nutrition Program (ECNP)?is a strategic St. David's initiative designed to bridge the nutrition security gap for families with children aged 0-5. By providing comprehensive meal packs and cost-effective, nutrient-dense recipes, the ECNP empowers caregivers to establish healthy dietary foundations that drive long-term developmental success.?

Beyond its core mission, the ECNP collaborates across St. David's departments:

  • Venture Forward:?Our staff dietitian leads weekly culinary education, helping young adults with disabilities build essential life skills.
  • Family Place:?Participants engage in rooftop gardening at our Minneapolis campus, providing kids with educational, hands-on?gardening?activities to strengthen understanding of fostering plants from seed to plate.

As a grant-funded program, the ECNP remains agile-continuously evolving to align with the shifting funding landscape and the lived needs of our community.?

Position Overview:

The?Dietetic Intern?will play a vital role in supporting our Registered Dietitian across three core programs: the Early Childhood Nutrition Program, Therapeutic Recreation, and Family Place. This position is responsible for:

  • Curriculum Development: Designing a comprehensive library of nutrition education handouts covering diverse topics such as prenatal care, "first foods" for infants, the brain-body connection, and nutrition labeling.
  • Program Implementation: Facilitating weekly cooking classes alongside Therapeutic Recreation staff and developing curriculum/activities for rooftop gardening classes with Family Place clients.
  • Operations & Logistics: Managing food access workflows, including the selection, procurement, and distribution of nutrient-dense food for program participants.
  • Culinary Innovation: Developing and testing cost-effective recipes specifically tailored for the nutrition program's needs.

Internship Qualifications:

  • Bachelor's degree and currently enrolled in university dietetic internship program.
  • Applicants must have the ability to use clear and understandable written and verbal English
  • Ability to communicate effectively, both through written and verbal communication.
  • Must have a valid driver's license, reliable transportation, and an acceptable driving record.
